Menu for the Homeless

DSC01677This weekend I coordinated a group of volunteer chefs and together we prepared a 3 course meal for 50 homeless people in Amsterdam.

With over 100 million homeless people worldwide, a drop in the ocean, but a very worthy effort.

Our contribution was in synch with Earth Hour [March 23, 2013], a global effort to unit people to protect the planet.

What was on the menu

A nutrient dense hearty meal filled with lots of fiber, protein and healthy fats.

Starter: Salad with  eggs, bell pepper, tomatoes, lettuce, cucumber.

Main course: Saute peanut chicken with rice and beans cooked in coconut milk.

Dessert: Custard with cream fraiche and strawberries.
